Our take on the ultimate meatball sub. Packed full of sauce, smothered in cheese, and with just the right amount of heat from our Spicy Marinara Simmer Sauce, this seriously satisfying sub is definitely one to try this lunchtime.

Ingredients

8–10 ready-made meatballs
- 1 large baguette (or 2 smaller ones)
- 1 ball of mozzarella, torn into chunks

2 tbsp pesto
- Fresh basil leaves
- Grated parmesan (to finish)

1 jar Spicy Marinara Simmer Sauce
Directions
In a frying pan or oven, cook the meatballs according to packet instructions until browned and piping hot all the way through. While they’re still hot, add a good few spoonfuls of Spicy Marinara Simmer Sauce to the pan and simmer for 5–7 minutes, letting the sauce coat the meatballs and reduce slightly.
Slice the baguette lengthways (but not all the way through, think of it like a sub roll).
Place the mozzarella on one side of the baguette, before popping the whole thing under a hot grill for 3–5 minutes until the mozzarella is bubbling and golden in places.
Spoon the saucy meatballs onto the mozzarella, before spreading a thin layer of pesto on the other side of the baguette. Add a few fresh basil leaves and finish with a hit of grated parmesan.
