Cut the chicken into small, even chunks (popcorn-sized). Season with salt and pepper.

Set up three bowls - one with flour, one with beaten egg, and one with panko breadcrumbs.

Dip each chicken piece in flour, then egg, then breadcrumbs. Press gently to help the coating stick.

Spray coated chicken with oil, then air fry at 200°C for 12–15 mins, shaking halfway, until golden and crisp.

Add cooked chicken to a large bowl. Pour over Buffalo Hot Sauce and toss to coat. Add more or less depending on your heat level.

Plate up the spicy popcorn chicken and scatter with chopped spring onions. Serve with Ranch Mayo on the side for dipping.
