BBQ Chicken Rice Bowls

Made as part of our BBQ Pulled Chicken meal prep. Fresh, vibrant and perfect for prepping. These BBQ Chicken Rice Bowls are the ultimate easy meal. Layered with fluffy rice, meal-prepped chicken, and finished with Chipotle and Lime Aioli, it’s a balanced bowl that tastes as good as it looks.
Ingredients

250g cooked rice

100g sweetcorn (fresh, tinned, or frozen)

1 roasted red pepper, sliced (from a jar or freshly roasted)

8–10 cherry tomatoes, halved

1 ripe avocado, sliced

Small handful of fresh coriander, chopped

Lime wedges, to serve

Chipotle and Lime Aioli, for drizzling
Directions
Heat a dry frying pan over medium-high heat. Add the sweetcorn and cook for 3–4 minutes, shaking the pan occasionally, until lightly charred.
Heat the pulled BBQ chicken in a pan or microwave until hot throughout.
Divide the rice between serving bowls. Top each one with the pulled chicken, charred sweetcorn, roasted peppers, cherry tomatoes, and avocado slices.
Drizzle over the Chipotle and Lime Aioli, sprinkle with chopped coriander, and finish with a squeeze of fresh lime juice.
