If the Brussels sprouts don’t look like this on Christmas Day, we don’t want them. Crispy-edged Brussels sprouts roasted until golden, tossed in Buffalo Hot Sauce, then finished with a crumble of blue cheese. It’s how sprouts should be done.
300g Brussels sprouts
1 tbsp olive oil
Salt & black pepper
50g blue cheese, crumbled
Preheat the oven to 200°C (fan).
Trim the bottoms off the Brussels sprouts and slice them in half lengthways.
Add the sprouts to a baking tray, toss with olive oil, salt and pepper, then spread out cut-side down.
Roast for 10 minutes, until starting to soften and colour.
Remove the tray from the oven and toss the hot sprouts with Buffalo Hot Sauce, coating evenly.
Transfer to a serving dish and finish with a generous crumble of blue cheese.
