Family dinners just got a whole lot tastier. This no-fuss Spicy Chorizo Pasta Bake features smoky chorizo and Sauce Shop's Spicy Marinara Simmer-Sauce, so you don't need any spices for this recipe. You're welcome.

Ingredients

  • 340g penne pasta

  • Pinch of salt for boiling water

  • Good glug of olive oil

  • 1 white onion, finely chopped

  • 200g Spicy chorizo, casing removed and chopped into small pieces

  • Mozzarella cheese, shredded

  • Cheddar cheese, grated

  • Fresh basil, chopped (for garnish, optional)

  • Spicy Marinara Simmer-Sauce
  • Garlic bread, to serve (optional)

Directions

1

Cook the penne pasta in a large pot of salted boiling water according to packet instructions until al dente. Drain and set aside.

2

In a large frying pan, heat olive oil over medium heat. Add chopped onion and sauté until softened, for a few minutes. Add chopped chorizo and cook until the edges are slightly browned, around 5-6 minutes.

3

Stir in the Spicy Marinara Simmer-Sauce and mix until all ingredients are combined.

4

Add the cooked pasta to the spicy chorizo sauce, tossing until the pasta is well-coated.

5

Transfer the pasta and sauce mixture to a baking dish. Sprinkle shredded mozzarella and grated cheddar cheese evenly over the top.

6

Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly, and the edges are golden brown.

7

Remove from the oven, garnish with fresh basil, and let it cool for a few minutes before serving.
