Made as part of our BBQ Pulled Chicken meal prep. Juicy BBQ pulled chicken meets creamy smashed avocado, zingy red onion, and a smoky chipotle-lime drizzle, all wrapped up in soft tacos.
6 small soft tortillas or corn tacos
150g ready-made smashed avocado
½ small red onion, thinly sliced
Small handful of fresh coriander leaves
Chipotle and Lime Aioli, to drizzle
If using pre-cooked pulled BBQ chicken, heat it gently in a frying pan over a medium heat for 3–4 minutes, or until piping hot.
Heat the tortillas in a dry frying pan for 20–30 seconds per side, or wrap them in foil and warm in the oven for 5 minutes at 180°C.
Spread a spoonful of smashed avocado on each warm taco. Pile on the pulled BBQ chicken, top with sliced red onion and fresh coriander.
Drizzle over the Chipotle and Lime Aioli, then serve with lime wedges for squeezing.
