
Golden Coconut Prawn Curry

Ingredients

200g Peeled and deveined king prawns

1 Tbsp. extra-virgin olive oil

1 onion, finely chopped

1 red bell pepper, finely chopped

½ fresh lemon, squeezed

Fresh parsley, chopped

White rice, to serve

Directions
Pat prawns dry with a paper towel, and heat 2 Tbsp. of oil in a large skillet over medium-high. Once hot, arrange prawns in pan, avoiding any overlap, and cook for 3 minutes. Flip, and cook 1 more minute, until the prawns are firm to the touch and no longer opaque. Transfer to a plate.
Reduce heat to medium. Add remaining 1 Tbsp. oil to pan, along with onion and red bell pepper. Cook 3 to 4 minutes, until soft.
Pour in Golden Coconut Simmer Sauce, before squeezing in the fresh lemon juice.
Place cooked prawns back into skillet and garnish with fresh parsley. Serve over rice.
