It doesn't get much more delicious than this. Easy chicken tacos with pineapple salsa. Featuring succulent chicken, fresh pineapple salsa, and our ridiculously fruity Pineapple Habanero Hot Sauce.
2 tablespoons fresh pineapple, diced into small chunks
¼ red onion, finely chopped
½ red chilli, deseeded and finely chopped
2 large tomatoes deseeded and chopped
Fresh coriander, finely chopped
Pineapple Habanero Hot Sauce
Salt, pinch
4 boneless, skinless chicken thighs
Glug of olive oil
1 tsp paprika
1 tbsp chipotle paste
1 tsp cumin
Pinch of salt
6 corn tortillas
Fresh coriander, finely chopped to garnish
Pineapple Habanero Hot Sauce
Sour cream for the base of the tacos
Chop your pineapple into small chunks
Finely chop coriander, red onion, tomato and red chilli
Add it all to a bowl with a drizzle of Pineapple Habanero Hot Sauce and a pinch of salt. Mix.
In a bowl, add your boneless, skinless chicken thighs.
Add oil, chipotle paste, salt, cumin and paprika. Mix.
Cook in the air fryer at 190C for around 15 minutes, or until the internal temperature hits 80-85C.
Once cooked, pull apart your chicken with two forks or roughly chop.
Add your corn tortillas to a dry, hot pan for a few seconds on each side until they’ve crisped up a little.
On each heated tortilla, spread over a little bit of sour cream, and add your chicken.
Next, spoon on your chunky pineapple salsa.
Finish by drizzling over some Pineapple Habanero Hot Sauce, and garnishing with finely chopped fresh coriander.
