Using BBQ sauce to glaze meat and vegetables gives a rich, caramelised coating. Perfect in a warming chicken tray bake.

Ingredients

1 Large Butternut Squash, Sliced

1 Garlic Bulb, Halved

2 Whole Red Onions, Quartered

6-8 Medium Sized Potatoes, Halved

450-500g of Chicken Thigh Pieces

1 bottle of Cherry Bourbon BBQ Sauce

60g of Original BBQ Rub

2 tbsp of Olive Oil
Directions
Preheat oven to 160C
In a large baking tray add in all of the vegetables, potatoes, garlic, and chicken pieces. Liberally coat in Original BBQ Rub and then spread the olive oil over the top. Then place in the oven to cook for about 45 minutes.
Take tray out of the oven. Pour Cherry Bourbon BBQ Sauce onto everything.
Raise the temperature of the oven to 190 or 200C. Place the tray back in the oven and cook for an additional 15 mins or until done.
Remove from oven and serve warm.
Recipe Note
Carrots make a great addition to this warming recipe.
