Pulled BBQ Chicken Tacos

Smoky, sweet, and made for summer. Tender pulled chicken tossed in Original Smoky BBQ Sauce, loaded into soft tortillas and topped with crunchy cabbage. 

Ingredients

  • For the BBQ pulled chicken
  • 3 chicken breasts

  • Salt & pepper

  • Original Smoky BBQ Sauce

  • Olive oil

  • To assemble
  • 8 small soft corn or flour tortillas

  • For the toppings
  • ¼ red cabbage, finely shredded

  • 1 fresh red chilli, thinly sliced

  • Fresh coriander, roughly chopped

  • Extra BBQ sauce, for drizzling

  • 4 tbsp guacamole

  • 1 lime, cut into wedges

Directions

Cook the chicken

Air fryer: Preheat to 180°C. Season chicken breasts with salt and pepper before coating in oil. Cook for 16–18 minutes, flip halfway through, until cooked. Rest chicken for 5 minutes, then shred with two forks. Toss chicken into a bowl with Original Smoky BBQ Sauce until well coated.

Oven: Preheat to 180°C. Coat chicken breasts with BBQ sauce and place into a baking dish. Cover tightly with foil. Bake for 25–30 minutes, or until cooked. Shred with two forks, and toss in more BBQ Sauce.

Prep the toppings

Slice the red chilli, shred the cabbage, chop the coriander, and set everything up taco-bar style.

Warm the tortillas

Heat tortillas in a dry pan for 20–30 seconds each side or wrap in foil and warm in the oven at 180°C for 5 minutes.

Assemble the tacos

Add a spoonful of guacamole to your warm tortilla and pile on the BBQ pulled chicken.

Add a layer of shredded red cabbage, some sliced red chilli and coriander. Finish with a squeeze of lime, and more BBQ sauce.
