Piri Piri Shakshuka

This isn't your usual shakshuka; this is a Piri Piri shakshuka. The perfect breakfast dish if you like a bit of heat - rich tomato sauce, runny eggs, and a hit of Piri Piri flavour make up this easy-to-make meal, ready in just 5 steps.
Ingredients

2 tbsp olive oil

1 small onion, finely chopped

1 red bell pepper, diced

1 jar Mother Tomato Simmer Sauce

100ml water

200g canned white beans, drained and rinsed

1–2 tbsp Piri Piri sauce (plus more for drizzling)

3–4 large eggs

Fresh parsley or coriander, chopped

Crusty sourdough bread, to serve
Directions
Heat olive oil in a large pan over medium heat. Add the chopped onion and diced red pepper. Cook for about 5 minutes, until softened and slightly golden.
Pour in the Mother Tomato Simmer Sauce. Add water, the white beans and 1 tablespoon of Piri Piri. Simmer gently for 10–15 minutes, allowing the flavours to meld and the sauce to thicken slightly.
Use a spoon to make small wells in the sauce. Crack the eggs directly into the wells.
Cover the pan and cook for 5–7 minutes, or until the eggs are done to your liking - runny yolks work beautifully here.
Drizzle with extra Piri Piri sauce and scatter with fresh herbs. Serve hot with slices of crusty sourdough bread for scooping.
