
Piri Piri Chicken Loaded Flatbreads

Flat-out delicious. Piri Piri chicken, feta, pickled onion, and chillies, aka, some of the world's tastiest ingredients, all hanging out in one flatbread. Love a bit of a kick? Add even more Piri Piri to this recipe.
Ingredients
- For the dough

250g self-raising flour (plus extra for dusting)

250g Greek yoghurt
- For the filling

2 cooked chicken breasts (air-fried or grilled)
- 3 tbsp Piri Piri, plus some for dipping

50g feta cheese, crumbled

2 tbsp pickled red onions, chopped

1 fresh red chilli, finely chopped

Small handful of fresh parsley, chopped
Directions
Air fry or grill chicken breasts until cooked through. Set aside to cool slightly.
To make the flatbreads, combine flour and yoghurt in a large bowl. Mix and knead briefly (1 min) on a floured surface until soft and bouncy. If sticky, add a little more flour. Cover and let rest whilst you're making the filling.
Prepare the filling by shredding the chicken and tossing it with Piri Piri. Stir in feta, pickled onion, chilli, and parsley.
Divide dough into 4 balls. Flatten one into a 3–4 inch round. Spoon filling into the centre. Fold edges over the filling and pinch to seal. Flip seam-side down and gently flatten to around ½ inch thick. Repeat with remaining dough.
Heat a dry non-stick pan over medium-high. Cook flatbreads for 3–5 mins each side until golden, puffed, and cooked through.
