These are aged hot sauces made using the same principles of Louisiana hot sauces, the most famous being Tabasco sauce.
We take chillies and combine them with sea salt before ageing them for 3 months to develop a fruity complex flavour. We then combine them with grape vinegar and minimal processing to preserve the freshness of the flavour.
These are sauces with a variety of heat levels the mildest is Original which is made with Jalapeno peppers. Amarillo is the next hottest with a beautiful tropical fruit flavour. Buffalo is next and is made with a combination of Jalapeno and Habanero, plus butter for richness and tamari for depth of flavour. The hottest of the range is Habanero which is intensely hot and fruity.
