Guajillo Chilli Breakfast Tacos

Looking for a quick breakfast that packs a punch? This is it. Soft tacos, topped with homemade guacamole, scrambled eggs, feta, and our brand new Guajillo Chilli Flakes. Good breakfast never came so easy.

Ingredients

  • 4 mini tortillas

  • 1 large ripe avocado

  • 1 large tomato, chopped

  • ¼ red onion, chopped

  • 1 red chilli, chopped

  • Salt and pepper, to taste

  • 2 large eggs (we used Burford Browns)

  • Dollop of butter, for the eggs

  • 50g feta, crumbled

  • Chopped basil, to garnish

  • Guajillo Chilli Flakes

Directions

Make Your Guacamole

Put your avocado, tomato, onion, red chilli, and salt and pepper in a bowl, before mixing until smooth.

Scramble Your Eggs

Put a dollop of butter into a medium pan on high heat, and wait for it to melt slightly before cracking in your eggs.

Use a spatula to fold your eggs in from the sides until fully scrambled (usually around 2-3 minutes).

Assemble Your Tacos

Cook tortillas per package instructions before placing on a plate.

Spread on your avocado before spooning your eggs on top.

Crumble feta onto tacos, alongside chopped basil.

Finish by shaking our Guajillo Chilli Flakes onto tacos.
